The Internal Change in the Commercial Beef Industry of Canada

‘During the late 1800’s and possibly the first 10 years of the present century it was the general practice to sell by the head depending on the age and sex. Following this period there was a swing to price per lb. basis which stemmed from the newly founded grain fed beef industry. A factor which also affected the beef industry was the demand for smaller and choicer cuts of processed beef. This requirement rose especially after the First World War with concentration of people in cites. This need was met by the producer with a smaller, quick-maturing type of beef animal. In order to have top quality the eastern feeder became a very important part of the beef industry.’
