Canada Beef launches its ‘Cuts by Colour Guide’

The Cuts by Colour Guide, powered by the Canadian Beef Information Gateway, was launched by Canada Beef in June to help cattle producers who sell beef directly to consumers. The guide is also suitable for use by small butchers and abattoirs. The guide is in poster format (24″ x 18″) and has colour coding and clear visuals to show where the various cuts originate, descriptions of the cuts, cooking methods, tips and more. 

The Cuts by Colour Guide also has a holder for gateway takeaway cards for customers. The Canadian Beef Information Gateway is a digital ecosystem all about beef and can be found at gateway.cdnbeef.ca. These cards feature QR codes that can be scanned with a smart phone, to access the wealth of information in the guide anytime and anywhere.

In addition to the printed copies, an online version of the Cuts by Colour Guide is available at gateway.cdnbeef.ca. The carcass schematic on the main page allows the user to access information about primals, subprimals and retail cuts with recipes and other useful information powered by the gateway. 

“As a butcher, I can speak firsthand to the importance of having a resource like this. It’s helpful to be able to clearly explain to my customers what retail cuts I can create for them when they purchase larger portions of the carcass,” says Cameron Chetin, from Cameron Chetin Meat Processing located in Alberta.

Mike Guest, a member of the Canadian Beef Check-off Agency Marketing Committee, notes “by increasing consumers’ confidence when cooking Canadian beef, they may not only find new ways to cook their favourite dishes, but consumers may also experiment with less familiar beef cuts. This may result in selling more of the carcass and increasing beef sales.”

Canada Beef will be providing provincial beef cattle associations with the poster ver- sion of the guide for further distribution. Plans are also underway to distribute the posters at industry events, trade shows and local producer meetings. 

Mark Klassen, executive vice-president of Canada Beef, says “with an increasing number of producers interested in marketing their own beef, we wanted to provide support through the creation of a dedicated resource. 

The guide and takeaway cards will assist by sharing helpful information to their customers at the point of purchase and at home.”
